Summer is officially underway which means fun in the sun, swimming, cottage season, and parties in the yard. There are so many amazing ways to enjoy the nice weather and time off school or work it can be a challenge to know where to start. Whether you’re packing for the beach, drawing with sidewalk chalk, playing hopscotch on the driveway or pitching a tent and having a camp-out; summer is an amazing time for fun. This summer, we really want to find fresh and fun ideas to keep our families fed, hydrated and cool throughout the heat, and we can’t wait to share some summer solutions with you!
Quinoa Southwest Summer Salad
In the hot summer months, it can be tough to eat anything really hot or which takes a lot of prep time. This cool summer salad is easy to make, take, and go, but it’s also great to serve to friends at a party or evening barbeque.
You will need:
1 cup quinoa
1 crushed clove garlic
1 ½ cup vegetable broth
2 tbsp olive oil
½ a lime, squeezed
½ tsp cumin
½ cup chopped green onion
1 bell pepper (orange, yellow or red) chopped
¼ cup cilantro (optional)
1 small can kernel corn, rinsed
1 small can black beans, rinsed
a pinch salt and pepper
Cook quinoa and garlic in vegetable broth until tender. Let stand or chill while preparing your vegetables and beans. Combine lime juice, olive oil, cumin and balsamic vinegar. Add vegetables and toss, then add the quinoa. Refrigerate until you’re ready to serve!
