Coconut Cowgirl Coffee

Just one sip of this coconut coffee latte will have you feeling energized and refreshed.

  •  Ice Cube Tray
  •  Blender

Ingredients

  •  1 t coconut oil
  •  2 C organic coffee
  •  1 t vanilla extract
  •  2 T cocoa powder
  •  1 C coconut milk

Instructions

  •  Fill an ice cube tray with coconut milk. Freeze overnight.
  •  In the morning, take 2 cups of chilled organic coffee and stir with coconut oil, vanilla extract, and cocoa powder. You can also add the ingredients to a blender and blend until well-combined and frothy.
  •  Add coconut ice cubes.

Iced Vanilla Bean Latte

INGREDIENTS:

  • 1 cup warm strong coffee (espresso roast preferable)
  • ¼ cup coconut milk
  • 1½ teaspoons maple syrup or honey
  • ¼ teaspoon fresh vanilla beans
  • ⅛ teaspoon ground cinnamon
  • ice
    *Vanilla extract may be substituted, but fresh vanilla beans are always best and provide the best flavor

INSTRUCTIONS:

  1. Mix the coffee, coconut milk, maple syrup, vanilla beans, and cinnamon together in a cup. Let cool to room temperature, about 15 minutes.
  2. Fill a large glass with ice. Pour coffee over ice and stir a few times to chill.
    Enjoy!

Coffee Jelly Almond Milk Tea

Coffee Jelly Almond Milk Tea

Ingredients

  •  cups room temperature black coffee/decaf/cold brew
  •  tbsp gelatin dissolved in ¼ cup of cold water
  • 1 tsp coconut sugar
  •  cups almond milk
  • ½ cup water
  • 2 tbsp black Assam tea (or 2 tea bags of any black tea)

Instructions

  1. Make the coffee jelly by mixing together the coffee, gelatin and sugar until everything is dissolved completely.
  2. Pour into a gelatin mold or regular glass pan and let it set in the fridge for 4-6 hours.
  3. Meanwhile, in a small saucepan, prepare the milk tea by simmering almond milk with ½ cup water over low heat for 1-2 minutes. Make sure it does not boil.
  4. Turn off the heat, add the tea and steep for 3-4 minutes.
  5. Filter out or remove the tea bags and place the milk tea in the fridge to cool.
  6. Once the gelatin is set, cut it into cubes and pour the cold milk tea over it and enjoy!

Coffee Smoothie

Serves: 2
Ingredients

  • 1 cup Almond Milk, Works best if it's chilled in advance and not a new container
  • 1/2 cup Coconut Milk, Full fat works best
  • 1/2 cup strongly brewed Coffee, Cold brewed or chilled - don't pour hot coffee into your blender because you won't end up with a smoothie
  • 1 whole Banana, Frozen
  • 1 Tbsp Almond Butter
  • 1 tsp Organic Cocoa Powder

Process

  1. Place all of the ingredients in your blender in the order listed above.
  2. Blend until smooth and creamy.
  3. Serve cold and enjoy this lively morning cup!

Coffee Ice Cream

Makes 1 to 1.5 quarts

1/2 cup whole coffee beans and 1 cup water (for a French press setup) or 3/4 cup strong-brewed drip coffee
1/2 cup (about 8), soft, pitted Medjool dates
1.5 (13.5 ounce) cans full-fat coconut milk (I like this brand because it is free of thickeners and additives)
1 tablespoon vanilla extract (Find organic, gluten-free vanilla extract here)
optional thickener: 1 tablespoon gelatin completely dissolved in ¼ cup boiling water (Find grass-fed gelatin here)

  1. If you’re using a French press, grind the coffee beans and add them to the French press. Add the water, just off the boil, and steep for 10 minutes. Press the coffee grounds down, then pour the coffee into the blender. Or use 3/4 cup strong brewed drip coffee.
  2. Add the dates to the blender and puree until smooth.
  3. Add the coconut milk, vanilla extract, and thickener (if using) and puree until smooth.
  4. Freeze for about an hour or refrigerate until cold.
  5. Pour into the ice cream machine and churn per the manufacturer’s instructions.
  6. Eat right away or freeze until hard for pretty scoops.
