Coffee and Baileys Freezer Cake
A spiral of bitter coffee 'sponge' with a cream cheese filling sweetened and laced with Baileys Irish Cream. And no baking! Prepare it and pop it in the freezer until you're ready to serve it up.
INGREDIENTS

300 grams crushed Digestives biscuits

100 grams Caster sugar

1 tablespoon Cocoa powder

150-200 milliliters strong black Coffee

150 grams Mascarpone cheese

200 grams Icing sugar

35 milliliters Baileys Irish Cream, or

1 tablespoon Vanilla Extract
INSTRUCTIONS

In a decent size mixing bowl, add the biscuits, the caster sugar and the cocoa power.

Mix it. Then add the coffee slowly.

Now, put the mixture into a piece of parchment paper and roll it out until its a quarter inch thick. When you achieve the correct fit, square it up a little bit using a knife.

Then, after you find the right shape, grab another bowl and mix mascarpone cheese, icing sugar sugar and baileys.

Wait 30 minutes. Spread the new mixture over the first one. Then roll all the way until the end. Put in the freezer until its ready to serve it.
